Innovation of the Year – Frymaster, LLC’s Frymaster Protector™ Fryer
The Frymaster Protector™ fryer with SMART4U technology, introduced at the October 2007 NAFEM Show, offers the next generation in ultra-high performance commercial frying, combining oil savings and energy conservation with labor-saving technological features. These innovative features generate measurable cost savings as well as environmental benefits. A smaller frypot that has the same production capacity and food quality as a fryer almost twice its size, the Protector’s 30-pound frypot generates a 40 percent savings each time the frypot’s oil is changed when compared to current 50-pound fryers. The revolutionary Oil Attendant™ automatically monitors frypot levels, and replenishes oil as needed from a Jug-In=Box (JIB) conveniently located inside the fryer cabinet. This automated feature minimizes the labor time involved with handling oil by eliminating the need to periodically retrieve bulky oil containers from storage to manually top off the frypot, thereby reducing labor costs and promoting worker safety.
The Oil Attendant also automatically monitors the JIB’s oil level; a flashing, front-mounted orange light alerts workers to replace the in-cabinet oil supply when its level gets low. By removing this guesswork in maintaining oil levels, the Protector maintains a constant supply of fresh oil to the frypot, which maximizes oil life. Documented in research by ESCA Enterprises, Inc of Glen Mills, PA, a smaller frypot and longer oil life can generate over 50 percent annual savings in oil costs and introduces less used oil into the waste stream. The smaller frypot also uses less energy to operate, earning it an industry-leading federal ENERGY STAR® rating of over 85 percent. These cost savings can in turn help operators transition to healthier, but higher-cost, trans fat-free oils, meeting customer demands for great-tasting, healthier fried foods and protecting profits by reducing both energy and oil usage costs.
Utility Rep of the Year – Debbie Therrell, Alabama Power Company
Debbie Therrell began her career at Alabama Power Company in 1975 as a customer service rep. Debbie steadily moved her way up the ranks to the Marketing Department when she entered Segment 6 Foodservice in 2003. Since becoming a member of the foodservice team at Alabama Power, She has used her experience and contacts in the Commercial Market to become a valuable part of the foodservice team. Her willingness to learn and adapt in the foodservice industry has made her a very successful part of the team locally and regionally. Debbie has taken opportunities with franchises that are traditionally gas installations and converted them to electric users and in most cases total electric. Debbie’s work with Church’s, Zaxby’s, Beef O’Brady’s and many others in her market area has lead to many conversions in other utilities for these franchise groups. She is always willing to share her success with others and will work tirelessly to accomplish a goal. Debbie’s dedication and willingness to succeed makes her among the most productive reps in the Foodservice Segment at Alabama Power.
Comment from one of Debbie’s colleagues:
“A recent application on a Hardees rebuild was going very good until the Hardees engineer said the old store needed to be up-graded to a 1200 amp main. The store was not a large unit and had been over-sized up to an 800 amp main when it was built originally. Debbie used the history billing on the account and the added load to prove to the company that an 800 amp service was sufficient to carry the load and after all was said and done she saved the sale of the electric equipment. Oh, Did I mention the store was in my territory and not even her report. This sharing of experience in load calculating and ability to communicate to the customers is an example of her willingness to share her knowledge and experience”. - Billy Griffis
Efficiency Improvement Award – CookTek
CookTek has developed a 6 “burner” commercial induction range, which it previewed at the October 2007 NAFEM Show. The unit delivers a 20-30% reduction in direct utility costs, when compared to conventional gas or electric ranges. Additional savings in air conditioning and ventilation costs are achieved through elimination of almost all waste heat-gain to the kitchen. Hood airflow can be reduced by more than 50%. Besides utility savings, speed and quality of food preparation is improved too, as each 3.5kw “burner” can be precisely set to a temperature, not just power level. Moreover, pan reaction to a setting change is instantaneous-faster even than gas. Finally, CookTek’s unique radio frequency communications and temperature sensing technology called “SmarTag” enables semi-automatic, product-specific cooking and retherming
